Scottish Dairy Expands Market with 'Low and Slow' Milk in London
Mossgiel Organic Dairy, based in Ayrshire, Scotland, has entered into a significant distribution agreement with Modern Milkman to deliver its unique 'low and slow' brewed milk to London. The dairy employs a gentle pasteurization process at lower temperatures over extended periods, preserving the milk's natural structure, flavor, and cream. This method aligns with stringent food safety standards while offering a product that feels closer to its natural state.
Founder Bryce Cunningham notes that the demand for their milk is driven by consumers seeking less processed alternatives to traditional dairy products. Mossgiel's product differs from conventional whole milk, which is often standardized and heavily processed. By contrast, their process maintains the milk's integrity and flavor.
The family-run dairy has expanded its capacity by over 10% by incorporating three additional farms in northern Scotland as direct suppliers. This expansion supports the dairy's growth beyond Scotland and enhances control over its milk supply chain. Mossgiel is notable for being Scotland's only fully independent organic dairy of its type and was the first in the UK to eliminate single-use plastics, opting instead for reusable glass bottles.
Modern Milkman, which facilitates the delivery of Mossgiel's milk, highlights the growing consumer interest in understanding food origins and processing levels. Mossgiel's milk is now available for home delivery across London and other parts of the UK, priced at £2.80 per litre in glass bottles. Additionally, the dairy supplies over 250 cafés across Scotland and produces more than 1.5 million litres of organic milk annually.
