Mossgiel Organic Dairy is known for its 'low and slow' brewed milk, a method that involves gentle pasteurization at 68°C for five minutes. This process preserves the milk's natural structure, flavor, and cream, offering a safe alternative to raw milk while maintaining a fuller flavor. Notably, Mossgiel Organic Dairy is recognized as Scotland's only fully independent organic dairy of its kind.

Founded by Bryce Cunningham after his family farm went bankrupt due to low milk prices, the dairy has developed a certified-organic model focusing on pasture-fed cattle, reusable packaging, and a closer connection between milk and its source. Although it has faced financial challenges, requiring substantial capital and seeking private investment and community-equity crowdfunding, Mossgiel Organic Dairy remains committed to creating a business with traceable provenance outside the conventional system, producing what it terms as Gold Standard milk.
