US dairy producers are contending with a shifting market landscape as consumer trends and federal pricing regulations evolve. The influence of GLP-1 weight-loss medications is altering dietary habits, with about one in eight Americans using these drugs, and this number is projected to increase to 18 million by 2029. This trend favors high-protein, low-fat dairy products, boosting the demand for items like yogurt, kefir, and cottage cheese. For instance, yogurt consumption increased by 6% compared to the previous year.

However, households using GLP-1 medications have reduced spending on higher-fat dairy products, with butter demand dropping by 6%, cheese by 7%, and cream by 5%. Despite this, overall US consumption of high-fat dairy products remains robust. In 2024, Americans consumed a record 6.8 pounds of butter per capita, with cheese consumption stable at 41.9 pounds, and ice cream increasing to 12 pounds per person.

Recent changes in federal milk pricing formulas have further strained dairy farmers' finances. The American Dairy Coalition reports that updated 'make allowances' within Federal Milk Marketing Orders, totaling $3 to $5 per hundredweight, have cut producer milk check revenue by approximately 5%. Meanwhile, processor margins have increased significantly, with Class III margins rising by 26.7% and Class IV margins by 39.1% since mid-2025, leaving farmers to bear the financial burden.

Additionally, improved milk component levels have enhanced processing efficiency, reducing the volume of milk needed for finished products. However, current pricing formulas exacerbate the negative financial impacts on producers. Producer organizations are advocating for the USDA to implement transparency through newly mandated audited cost surveys, as authorized by the One Big Beautiful Bill Act of 2025, to prevent cost-shifting to producers.

Despite these challenges, there is strong demand for higher-value, differentiated dairy products, particularly among higher-income consumers who are more likely to use GLP-1 medications. Industry leaders stress that without reforms to federal pricing systems, these market opportunities may not lead to better returns for producers.
