Cottage Cheese Production in Russia Rises by 9.5% Amid Decline in Butter and Milk Output
In Russia, as of January-February 2026, the dairy industry showed mixed dynamics: while there was a significant increase in the production of cottage cheese and cheeses, key categories saw a decline.
According to Rosstat data:
- cottage cheese — 87.6 thousand tons (+9.5%)
- cheeses — 136 thousand tons (+1.1%)
- fermented milk products (excluding sour cream) — 355 thousand tons (+0.4%)
At the same time:
- milk (except raw) — 982 thousand tons (–2.4%)
- butter — 51.1 thousand tons (–2.7%)
This dynamic indicates a redistribution within the dairy basket:
- the accelerated growth of cottage cheese reflects demand for more affordable and protein-rich products
- moderate growth in cheeses confirms stable but limited demand
- the decline in milk and butter signals pressure on mass categories
This indirectly confirms a trend towards consumption optimization and market sensitivity to price.
In other segments of the food industry, the situation is also mixed:
- sunflower oil — +3.2% (1.3 million tons)
- meat (cattle, pork, etc.) — +4.4% (621 thousand tons)
A decline was recorded in several categories:
- margarine — –19.7%
- flour — –3.2%
- cereals — –9.5%
- poultry meat — –2.2%
Overall:
- food production — –0.5%
- beverage production — –7.7%
