Evaporated milk is produced by taking away some of the water present in ordinary milk. The process leaves a denser, creamier liquid with a higher concentration of the milk’s natural components. The product is then heat-treated and packaged to extend its shelf life.

Its name refers to the removal of part of the original water through evaporation. Although evaporated and condensed milk belong to the broader category of concentrated milks and may look alike, their composition is different. Condensed milk contains a substantial quantity of added sugar, whereas evaporated milk is not defined by that addition.

The distinction affects how the two products are used. Condensed milk is mainly associated with desserts and other sweet preparations. Evaporated milk can be included in sweet or savoury recipes and, depending on the product, may also be consumed after dilution.

Its applications include coffee, cocoa and other drinks, as well as desserts, creams, sauces and soups. It is also used in savoury dishes and in recipes requiring a creamier texture. Because it is more concentrated than liquid milk, it can add body to a preparation without requiring large quantities.

Peru developed a strong domestic market

Evaporated milk is sold in various countries, but it has a particularly established place in Peru. Peruvian official bodies continue to identify it as the country’s most-consumed dairy product. The product’s industrial history there extends back more than 80 years.

Gloria began producing evaporated milk in Arequipa in May 1942. Its presentation in cans, ease of storage and ability to be distributed across territories with different conditions supported its wider availability. Over time, Peruvian consumers incorporated the concentrated milk into their established eating habits.

The product was initially developed as a way to make milk more concentrated and durable, facilitating its preservation and distribution. In some markets, including Peru, it subsequently became a long-standing part of household consumption and retained a presence across generations.
