The demand for high-protein products is creating new opportunities for dairy producers. One promising category could be compact dairy and cheese snacks that can replace a traditional breakfast or snack. This was discussed by dairy marketing expert Yuri Vlasenko during a DairyNews webinar.

According to the expert, consumers are increasingly seeking products that combine nutrition, convenience, and portability. High-protein yogurts, cottage cheese products, cheese snacks, smoothies, and single-serving dairy desserts could meet these demands.

"Consumers need not just a protein product. It must be convenient, of stable quality, and easy to understand in terms of consumption," Vlasenko emphasized.

The category's growth is supported by the increasing consumer focus on protein-rich diets. The expert also noted that when developing such products, manufacturers must consider not only protein content but also fiber, sugar, fat, and overall nutritional value.

Special attention during the discussion was given to kurt, a traditional fermented dairy product common in Central Asia. Its advantages include high nutritional value, compact format, and the ability to store some varieties without constant refrigeration.

Webinar participants believe that kurt could be repositioned as a modern protein snack. To achieve this, manufacturers need to adapt portion sizes, consistency, flavors, and packaging to meet young consumers' expectations.

Lactose-free products and items with added value were also highlighted as promising directions. However, simply labeling a product as "high-protein" is not enough; it must have stable organoleptic characteristics and meet the stated consumer benefits.
