Glendale Shepherd dairy farm, located in Washington State and operated by the Swanson family for three generations, has become the first producer in the U.S. to master the production of vodka from sheep milk whey.

The production process began with consultations from researchers at Oregon State University, who studied the possibilities of distilling whey—a cheese-making byproduct rich in protein, calcium, and fats. The new vodka is released under the brand Wheyfarer.

In addition to producing cheeses, yogurts, and meats, the Swanson family also raises sheep. Vodka production has become one of the ways to make additional use of the raw materials. To create the beverage, yeast is added to the whey to start the fermentation process. The resulting mixture then undergoes distillation. Farm co-owner Lynn Swanson notes that the whey vodka has a distinctive aroma, which she describes as "almost floral, slightly sweet."

It is noted that the practice of producing whey-based vodka exists outside the U.S. as well. For example, in Wales, a company named Ewenique Spirits is involved in similar production, also specializing in sheep farming and cheese production from sheep's milk. A similar beverage is produced by Morgans Winery & Distillery in Australia.
