Mexico's Dairy Industry: Efficiency and Market Challenges
Grupo Lala, a leading player in the Mexican dairy industry, processes approximately 8 million liters of milk daily. This operation involves about 500,000 cows spread across 124 ranches, highlighting the industry's large scale. The milk is distributed as over 33 million glasses daily through half a million sales points. The logistics chain ensures milk reaches store shelves in under 48 hours post-milking.
The company's cows produce an average of 36 liters per day, with peaks exceeding 40 liters. This high productivity is supported by animal welfare standards approved by the Mexican Federation of Veterinary Medicine and the Ministry of Agriculture's Good Livestock Practices certifications. Each cow benefits from 66 square meters of space, and 60% of the energy used comes from solar power.
Despite these efficiencies, the dairy sector faces consumer misconceptions about lactose intolerance. Mary Carmen Mondragón, Grupo Lala's Nutrition Director, points out that only 30% of Mexicans are truly lactose intolerant, while 70% can consume milk without issues. She notes that other health issues are often misattributed to lactose intolerance.
In terms of product differentiation, the company emphasizes that plant-based beverages made from almond, oat, or rice should not be considered equivalent substitutes for animal milk. These alternatives lack the natural nutrient matrix of milk, which includes high-quality proteins and essential vitamins. Plant-based options require artificial fortification to match milk's nutritional profile.
The industry is adopting advanced technologies to meet changing consumer needs. Innovations like industrial ultrafiltration allow for selective separation of lactose, concentrating protein and calcium levels, and cater to specialized high-margin markets. Controlled pasteurization ensures food safety without compromising taste, illustrating the synergy between science, farming, and food sovereignty in supporting Mexico's dairy sector growth.
