Marshfield Farm Unveils New Ice Cream Range for Professional Kitchens
Marshfield Farm Ice Cream has launched a new ice cream range called Acres, specifically designed for chefs and professional kitchens. This new line is produced on the family's 1,200-acre regenerative dairy farm located in Wiltshire. The range aims to meet the demands of busy kitchens by offering quality ingredients with the stability and consistency required during service.
Acres ice cream is formulated to complement other dessert elements rather than overpower them, featuring a low overrun to create a denser texture and richer mouthfeel. The range includes four flavors: Madagascan Vanilla, Chocolate Sea Salt, Caramel Sea Salt, and Strawberry, each provided in 4.5-liter tubs with a retail price of £24.38.
The production process begins with fresh milk from the farm's 250 cows, with about 95% of their feed grown on the farm. This control over the supply chain ensures consistency in milk quality, supporting the farm's regenerative agriculture practices.
Key ingredients include Madagascan vanilla, 52% cocoa mass dark chocolate, hand-harvested Cornish sea salt, and fresh strawberries. These ingredients are selected to provide clear, concentrated flavors that perform well in a professional kitchen environment.
Joe Baldwin, National Accounts Manager at Marshfield Farm Ice Cream, highlighted the importance of consistency and performance in professional kitchens, stating that Acres was developed to resolve issues chefs face with traditional ice creams.
The launch follows a £5 million investment in dairy and production facilities, allowing the business to scale up production while maintaining quality standards. A new kitchen and space for chef demonstrations and tastings have also been developed.
Acres will be showcased at the Hotel, Restaurant & Catering Show at Excel London from March 30 to April 1, with the team exhibiting on stand S371.
