Israel's Gad Dairies and Remilk Introduce Cow-Free Milk to Market
After over a decade of research and development, Gad Dairies and Remilk have brought cow-free milk to the mass market in Israel. This product represents a first in the dairy industry, utilizing precision fermentation to replicate the taste, texture, and functionality of conventional milk without utilizing cows. The milk, containing 3% fat, is designed for daily consumption, foodservice, and barista applications.
Remilk’s technology involves inserting genes responsible for milk protein production into specially developed yeast strains, which then produce proteins identical to those found in cow's milk. This process significantly reduces the environmental impact associated with traditional dairy production. The final product is lactose-free, cholesterol-free, and enriched with calcium, vitamins, and dietary fiber.
Industry observers note that this launch marks a strategic shift towards sustainable protein, with the product now available in major retail chains across Israel. This development places Israel at the forefront of dairy innovation, aligning with global efforts to reduce emissions and meet rising protein demand.
The collaboration between Gad Dairies and Remilk highlights a trend of traditional dairy companies working with food-tech startups. Precision fermentation dairy offers a potential path to diversify portfolios and meet consumer expectations regarding sustainability and animal welfare.
As the cow-free milk enters the commercial market, it is expected to influence future partnerships in the dairy and food technology sectors, aiming to maintain the sensory and nutritional qualities expected from dairy products.
