Brazil is among the world’s largest condensed-milk producers, using a controlled industrial process to preserve the product’s taste, colour and texture. The method combines sugar, vacuum evaporation and controlled crystallisation before the cream is sealed in sterilised cans.

Condensed milk acquires its defining characteristics during processing. Sugar is added in an amount equivalent to nearly 45% of the liquid’s initial volume. It acts as a natural preservative and helps prevent the cream from souring over time.

The mixture is then transferred to a vacuum tank. Around 70% of its water is removed at relatively low temperatures, reaching up to 70°C. The temperature is kept within this range to preserve the product’s characteristic colour.

Crystallisation is identified as the most sensitive stage of production. Before filling, the condensed mixture is cooled rapidly and receives sugar microcrystals directly in a stainless-steel tank. This initiates a controlled recrystallisation process.

The treatment is intended to prevent a sandy texture from forming at the bottom of a 400-gram can. This texture is described as one of the principal quality problems that manufacturers seek to eliminate.

After crystallisation, the cream is injected into cans sterilised either by fire or ultraviolet radiation. The containers are sealed hermetically, allowing the product to remain on shelves for months without losing its quality or safety.

The origins of the method date to 1856, when inventor Gail Borden developed a formula designed to help milk withstand long sea voyages. Condensed milk expanded during the American Civil War, when it was used as an energy ration for soldiers, and later became a household product. The historical development now forms part of an industrial chain of precision in which Brazil is among the largest global players.
