Aguascalientes produces 1.5m litres of milk daily

Aguascalientes is producing approximately 1.5m litres of milk per day, reinforcing its position as one of central Mexico’s established dairy regions, according to Gerardo Federico Salas Díaz, president of the Aguascalientes State Agri-food Council (CEAA).

About 1m litres of the daily output are transported to other states for supply and industrial processing. The CEAA described the local market as stable, with demand supported by regional consumers’ preference for fresh fluid milk, cheese and cream.

Local processing plants have continued to strengthen production standards and controls over raw materials. The measures are intended to maintain the quality of their products and the competitiveness of their brands, the council said.

On commercial oversight and food safety, Salas Díaz said milk adulteration had been virtually eliminated in the state. He described the cases associated with “dairy huachicol”—a sector term for the informal diversion or adulteration of milk—as isolated incidents addressed through timely supervision by companies and the relevant authorities.

Health authorities and local livestock organisations also carry out periodic inspections at slaughterhouses and other slaughter facilities. The inspections include checks for prohibited substances such as clenbuterol.

The CEAA said compliance with these rules supports the safety of livestock and protects public health. It also described the controls as supporting the movement of livestock and trade in live animals from the state.

The council attributed the dairy region’s position in the national supply system to coordination between primary producers and industry organisations, combined with sanitary controls, steady production volumes and shipments to other parts of Mexico.
