The National Institute of Food Technology, Entrepreneurship and Management, Thanjavur (NIFTEM-T), marked a significant stride in culinary innovation by unveiling a groundbreaking non-dairy millet ice cream at Krishi Mela-2023, hosted by the University of Agricultural Sciences, Bangalore.

Crafted with millet as its primary ingredient, this non-dairy delight caters to individuals with lactose intolerance and those adhering to a vegan lifestyle. Brimming with farm-fresh goodness, the ice cream boasts high nutritional value, enriched with iron and vitamin B1. The University of Agricultural Sciences highlighted its health-friendly attributes, attributing the richness to a diverse array of phyto-nutrients.

Providing a snapshot of its nutritional composition, the millet ice cream packs 35.7 grams of carbohydrates, 3.1 grams of protein, 9.1 grams of fat, 0.6 grams of crude fiber, and an energy content of 183 kcal, as outlined in the official release.

The unveiling ceremony was graced by V. Palanimuthu, Director of the National Institute of Food Technology, Entrepreneurship and Management, Thanjavur. The introduction of this innovative non-dairy millet ice cream aligns with the institute's commitment to advancing food technology and meeting the evolving dietary preferences of diverse consumer groups.

From May to September 2023, according to the Bureau of National Statistics (BNS), the country produced more than 46 thousand tons of ice cream and edible ice. This is 32.6% more than in the same period last year. Today, the share of domestic ice cream on the market is more than 80%.
