World Dairy Summit to Address Codex Guidelines on Controlling E. coli in Raw Milk and Cheeses
The World Dairy Summit, organized by the International Dairy Federation (IDF), will feature a critical presentation on the recently adopted Codex Guidelines for controlling Shiga toxin-producing E. coli (STEC). Professor Delphine Sergentet, co-chair of the Codex working group that developed these guidelines, will discuss key aspects relevant to dairy, particularly the Annex on Raw Milk and Raw Milk Cheeses.
Adopted at the 46th session of the Codex Alimentarius Commission (CAC46) in November 2023, the Codex Guidelines (CXG 99-2023) build on established food hygiene provisions and introduce control measures specifically targeting STEC strains in raw beef, fresh leafy vegetables, raw milk, raw milk cheeses, and sprouts. The Annex on Raw Milk and Raw Milk Cheeses focuses on unpasteurized products, addressing the unique risks associated with consuming raw dairy items. Unpasteurized milk and cheeses are more vulnerable to contamination and present a higher risk of illness compared to those that have undergone pasteurization or similar control processes.
Professor Sergentet, who also serves as a Professor of Food Quality and Safety at Vetagro Sup, a leading French veterinary school, has played a central role in shaping these guidelines. Her presentation will be part of the Summit's Food Safety section, under the theme “The One Health approach in food safety.” This section emphasizes the interconnectedness of human, animal, and environmental health in food safety practices.
