Vanshika Khurana shares pumpkin seed milk recipe with 2g protein per 100ml
Mumbai nutritionist Vanshika Khurana has outlined a homemade plant-based drink using three core ingredients: pumpkin seeds, sesame seeds and water. The recipe calls for 4 tablespoons of pumpkin seeds, 1 tablespoon of sesame seeds and 750ml of water.
The beverage is described as a source of magnesium, zinc, antioxidants and healthy fats because of its pumpkin-seed content. Khurana also attributes 2g of protein per 100ml and 32 calories to the drink. She said it can be used as a dairy alternative and may be suitable for women dealing with polycystic ovary syndrome, or PCOS.
Preparation method
The seeds should first be soaked in water for four to six hours or overnight. Once softened, they are blended with 750ml of fresh water for about 30 to 40 seconds, until the mixture becomes smooth and creamy.
The blended mixture is then passed through muslin cloth or a fine sieve. This separates the liquid from the remaining seed pulp. Honey, cinnamon and sea salt can be added to the milk according to taste, although these are flavouring additions rather than part of the recipe’s three core ingredients.
The finished drink should be poured into a clean glass bottle and kept in the refrigerator. Khurana said it can remain fresh for two to three days and advised that it should not be heated.
Uses for the remaining pulp
The strained pulp can be combined with wheat flour and used in rotis, parathas or pancakes. It can also be mixed with dates, cocoa powder and peanut butter to make energy bites. Another option is to blend one or two tablespoons into smoothies as an additional source of minerals and fibre.
