United States butter consumption reached 6.8lb, or roughly 3.08kg, per person in 2024, according to figures from the US Department of Agriculture cited by Dairy Processing. The result was the highest recorded level in the country. Data from Circana, updated through July 12th 2026, showed differing sales performances among leading American brands as producers competed through formulation, provenance, flavour and intended use.

One area of development is compound butter, in which additional ingredients are mixed into a butter base. A 2025 Menu Concepts + Cravings survey by Rubix Foods, also cited by Dairy Processing, found that about one in five respondents wanted restaurants to offer more flavoured butter. In North American food service, such products are used with bread, breakfast sandwiches and seafood, and as finishing ingredients for dishes.

Land O’Lakes brought back a limited-edition product called Every Little Thing after what the company described as a favourable consumer response. The formulation contains garlic, onion, poppy seeds and hemp seeds. It was first introduced in March 2023. Lifeway Foods has entered the segment with kefir butter made from fermented cream and marketed as a European-style cultured butter. Its range includes unsalted, sea-salted and honey versions.

Other launches have focused on fat content, origin and convenience. Red Barn Creamery, a dairy-butter brand introduced by Flora Food Group, makes its product in Kansas with 84% fat and offers salted and unsalted versions. The company says it uses cream sourced in the United States and produces the butter in small batches. Organic Valley has combined organic butter with organic olive oil, saying the recipe was designed to make the product easier to use immediately after refrigeration.

US consumption figures do not establish that the same pattern applies in Brazil. A 2026 study published by Embrapa Gado de Leite examined spontaneous associations with milk, yoghurt, cheese, butter and condensed milk. Participants most commonly linked butter with everyday cooking, while milk and yoghurt were more strongly associated with health, nutrition and daily consumption. The researchers said that understanding these associations can inform communication and innovation strategies.

The changes in butter form part of wider experimentation across dairy categories, where protein, fermentation, convenience and functionality are being used in product development. Global launches containing milk proteins grew by more than 8% in 2025, according to Innova Market Insights data cited by BHBFood. In butter, however, differentiation has centred on flavours, fermentation, fat level, complementary ingredients, origin and culinary applications. Circana's figures through July showed that some brands increased dollar and unit sales while others declined, alongside the rise in US per-capita consumption.
