Study Highlights Variations in Milk Fatty Acid Profiles
The University of Vermont conducted a study presented at NUTRITION 2026 which examined the nutraceutical composition of milk from various farming systems. Researchers analyzed over 300 samples collected from Vermont and New York, categorizing them into conventional, organic, organic grass-fed, and non-organic pasture-based models.
The findings showed that organic grass-fed milk had the highest average concentration of omega-3 fatty acids at 88 mg per serving, compared to 25 mg in conventionally produced milk. Conversely, conventional milk displayed the highest omega-6 fatty acid density with 166 mg per serving, while pasture-based organic milk had 92 mg per serving.
The research indicated that the lipid profile of non-organic pasture-raised milk is generally comparable to organic milk, suggesting that access to fresh pasture enhances the synthesis of functional fatty acids. Seasonal variations in milk's nutritional content were linked to changes in the quality and digestibility of forage available to cows.
Despite the significant physicochemical differences found, researchers Emily Youngmark and Jana Kraft advised cautious interpretation of health implications. While higher omega-3 intake is associated with reduced risk of cardiovascular diseases and type 2 diabetes, these variations alone do not drastically affect health but contribute to a healthy diet and lifestyle.
This study provides important scientific evidence on how nutritional management and climatic factors shape the density of bioactive nutrients in milk, offering valuable differentiation parameters for the dairy industry and pasture-based production systems. These findings cater to consumers who prioritize functional attributes in their food choices.
