Nutritional and Production Differences in Fermented Dairy Products

Traditional yogurt is made through controlled lactic fermentation at temperatures between 40-45°C. This process uses standardized strains such as Lactobacillus bulgaricus and Streptococcus thermophilus to consume lactose and coagulate milk proteins. The result is a product rich in highly bioavailable calcium and enhanced digestibility compared to liquid milk. It serves as a versatile base for smoothies, light dressings, and marinades.

Greek yogurt starts with the same lactic fermentation but includes an additional step of straining or centrifugation to remove liquid whey. This concentration of total solids leads to a product with up to double the protein content per serving, a significant reduction in soluble carbohydrates, and a lower glycemic index. Its creamy texture makes it suitable as a substitute for sour cream in both sweet and savory dishes.

Kefir is characterized by a mixed fermentation process involving both lactic and alcoholic fermentation at room temperature. This involves grains containing a community of over 30 strains of bacteria and yeasts. Kefir achieves over 99% lactose degradation, making it highly tolerable, and produces bioactive compounds with antibacterial and immune-modulating properties. The final product is a lightly effervescent beverage.
