In Venezuela, a mere 14% of the milk produced reaches industrial processors, with a significant 86% being converted into artisanal cheeses. Andrés Kowalski, the president of the National Dairy Circuit Observatory, highlights that much of the country's milk production, 65%, occurs in border states. The limited industrial engagement is partially due to fluctuating prices dictated by supply and demand, where rainy seasons lead to a decrease in prices due to increased milk supply.
Notably, only half of the industrially processed milk ends up as milk powder, representing just 7% of total production. The reliance on informal artisanal cheesemaking poses both a challenge and an opportunity for local dairy farmers, who would otherwise struggle to distribute their produce effectively.
