Irina Ivanova, Co-Founder of Innovative Dairy Solutions (IDS) (Russia), speaking at the Dairy Olympics in the UAE, noted that the consumption of kefir and cottage cheese is gradually declining in Russia. This is confirmed by data from retail chains.

At the same time, there is growth in the HoReCa segment for lactose-free dairy products and yogurts.
“If you want to become a reliable supplier for HoReCa, you need to befriend chefs or hire them. This will help you understand how to adjust your technology to produce a product that’s in demand,” she said.
A major segment is ready-to-eat food. In the expert's opinion, this is exactly where private labels of retailers are gradually shifting. Retail chains are already actively entering this category and showing strong demand for ingredients used in ready-to-eat food production.
