Granja Morelos has expanded its dairy operations in Aguascalientes by producing A2 milk and a range of Mexican and international cheeses. The company combines verified A2A2 cattle genetics with KMD certification under the Jalab Israel standard.

Granja Morelos operates in Pabellón de Arteaga, in Aguascalientes’s dairy-producing region. The agricultural company produces, processes and packages fluid milk and dairy products, integrating cattle management, cheese manufacturing and its own logistics network.

The company’s milk comes exclusively from cows whose A2A2 genotype is confirmed through DNA testing. Its product range includes whole and reduced-fat milk. Granja Morelos presents A2 milk as distinct from conventional milk containing the A1 beta-casein variant, and describes it as retaining the protein structure associated with ancestral cattle.

The facility holds KMD certification in the Jalab Israel, or Cholov Yisroel, category. The standard involves continuous rabbinical supervision across the production chain. Checks cover hygienic milking at the farm, physical and chemical testing of the refrigerated tank, pasteurisation, curd formation and final packaging.

The certification also provides traceability for the raw material, according to the company’s description of its production system. It requires the exclusion of unauthorised additives and compliance with international food-safety standards.

Granja Morelos makes Panela, handmade string Oaxaca, semi-hard Manchego, Chihuahua, Asadero, smoked Provolone and matured Cotija cheeses. Its portfolio also includes cream and whole butter without preservatives.

The company sells beyond the Bajío through specialist shops, delicatessen bakeries and kosher chains in parts of Mexico City and the State of Mexico, including Tecamachalco, Polanco, Interlomas and Chamizal. It also sells directly to consumers through digital platforms. The business links animal welfare, sustainable herd management and genetic technology with specialised dairy markets, while operating as a small- or medium-sized agro-industrial company in Mexico’s dairy sector.
