Every year, consumers and restaurants worldwide use approximately 25,000 metric tonnes of Fonterra's Perfect Italiano Mozzarella. Produced in Stanhope, northern Victoria, this quantity can make 170 million pizzas each year, equivalent to traveling between Stanhope and Rome, Italy, three times.

According to Steve Taylor, Fonterra Australia regional operations manager, Perfect Italiano Mozzarella is highly popular in Australia and Asian markets. It's found in nearly half of the households in Australia and is the top culinary cheese brand in the country. In addition, it's the leading mozzarella brand in the Australian food-service industry and exports around 8,000 metric tonnes to markets like Singapore, Malaysia, and Hong Kong annually.
To mark International Cheese Pizza Day, Fonterra's cheesemakers explained the process behind Australia's preferred mozzarella. James Harris, Fonterra Quality Assurance Technician, has been testing cheese in Stanhope for over 50 years, ensuring that only the highest quality cheese reaches Australians.
The cheese undergoes extensive testing for attributes like taste, aroma, flavor, texture, and its signature stretch. As mozzarella is well-known for its stretch, it is crucial that the texture is consistent with its taste.
The Stanhope site includes a test kitchen and commercial pizza ovens to ensure top-quality cheese. This entails further checks for "meltability," blistering, and stretch, to maintain the same quality in its texture as in its taste.
Fonterra's Stanhope operations have been delivering high-quality dairy products for over a century, gathering milk from approximately 110 northern Victorian farmers.
