Dairy Production and Pricing Trends in H1 2025

The first half of 2025 marked a significant shift in dairy production dynamics. Butter production rose by 14.4% compared to the previous period, with cheese production, which includes types used for processed cheeses, aged, and fresh varieties, increasing by 13.6%. These figures also reflect a 6.4% increase in butter and an 11.6% increase in cheese output compared to the first half of 2023.
Conversely, there was a downturn in the production of sour milk products such as yogurt, kefir, and curd, as well as cream. These sectors saw reductions of 4.9% and 3.0% respectively compared to H1 2024. Compared to H1 2023, sour milk production decreased by 3.9%, cream by 4.1%, and drinking milk remained unchanged by 3.8%.
The average purchase price of raw milk also surged, reaching 484.96 euro per tonne, which is an increase of 23.6% compared to H1 2024 and 35.9% compared to H1 2023. The highest price was recorded in February, peaking at 490.19 euro per tonne. In terms of volume, milk procurement slightly increased by 0.2% to 416.1 thousand tonnes in H1 2025 compared to H1 2024.
