The milk used in cheesemaking affects the finished product’s composition, texture, aroma and flavour. Sheep’s-milk cheese generally has a higher concentration of solids, fat and protein than the corresponding cow’s- and goat’s-milk products. That composition can increase cheesemaking yield and contribute to pronounced flavours and a rich, persistent texture. The result still varies substantially with the manufacturing process and the length of maturation. Darío also referred to the presence of short- and medium-chain fatty acids in sheep’s milk when discussing how these cheeses behave during digestion.

Cow’s-milk cheese covers a particularly broad range of products. Fresh, mild cheeses can differ sharply from semi-hard varieties or cheeses matured for long periods, even though all are made from bovine milk. In general, Darío described cow’s-milk cheese as milder and creamier than some sheep’s- and goat’s-milk varieties. He added that certain cow’s-milk cheeses may feel heavier for some people.

Goat’s-milk cheese is often associated with a more noticeable acidic quality. Darío said this feature is sometimes mistaken for greater strength: “Goat’s cheese has a more acidic note, which people often confuse with it being a stronger cheese.” Goat’s cheeses range from fresh and delicate products to matured varieties with more prominent aromas and flavours.

Darío said goat’s cheese may feel lighter for some people. He also linked certain components of sheep’s-milk fat to a different digestive experience from that associated with bovine cheeses. The source stressed that digestion cannot be explained by the animal species alone. Portion size, fat content, maturation, the cheese’s composition and individual characteristics all affect the response.

Lactose levels can also differ considerably between cheeses. During production, and particularly during maturation, a substantial amount of lactose may be removed or transformed, leaving some mature cheeses with very low quantities. Other variables include the cultures used, moisture, curd treatment, the animals’ feed and cheesemaking technology. As a result, two cheeses made from the same type of milk can differ more from each other than two products made from different milks.
