Characterized by its creamy and moist texture, buffalo mozzarella is produced from buffalo milk, involving processes such as coagulation, heating, and stretching the curd in hot water. These methods result in a delicate cheese typically kept in brine to maintain its moisture.

According to nutritionist Daniela Meira, buffalo mozzarella differs from traditional mozzarella primarily in its milk composition. It contains lower lactose levels and higher calcium content, along with a distinct fat profile. Protein content is slightly higher, with buffalo mozzarella offering around 24 to 26 grams of protein per 100 grams, compared to 22 to 24 grams in traditional mozzarella.

While freezing is feasible, it is recommended to store the cheese without its brine and properly wrapped. Once defrosted, its texture may slightly alter, but it remains suitable for use in sauces, fillings, and pasta dishes.
