Pure Dairy is nearing the completion of its state-of-the-art, 13,000-square-metre cheese manufacturing and processing facility in Dandenong South, with production scheduled to commence in April 2025. Situated in Melbourne’s southeastern industrial precinct, the new facility will feature advanced dairy technology previously unseen in Australia, setting a new standard for the local industry.

Structural construction on the site has been completed, and the installation of specialized automated processing equipment is well underway. The facility is expected to become a major contributor to Australia’s dairy sector, enhancing production capabilities and supporting both local and international markets.

Adrian Josephson, Executive Chairman of Pure Dairy, emphasized the strategic importance of the new facility. “For over ten years, we’ve been working closely with clients globally to optimize their dairy operations. This new facility embodies our commitment to the industry and represents our international thought leadership. Pure Dairy’s factory is a major asset to every stakeholder in Australian dairy,” said Josephson.

Progress Update

Construction: The main structure has been finalized, with internal space configuration progressing. Additionally, a dedicated test kitchen is under development, aimed at dairy product innovation.

Equipment Installation: Automated processing systems are currently being installed, which will boost production efficiency and ensure consistent, high-quality output.

Sustainability: Pure Dairy has integrated energy- and water-saving technologies as part of its commitment to environmental sustainability, aligning with global best practices in dairy production.

Next Steps

As the facility enters its final phase of equipment installation and operational testing, it prepares to manufacture a range of premium dairy products—including mozzarella, cheddar, and specialty cheeses—for both domestic and export markets. Once fully operational, the Dandenong South plant is expected to create over 100 jobs, giving a boost to the local economy and providing new opportunities for suppliers and manufacturing partners.

Josephson highlighted Pure Dairy’s passion for local production, stating, “We see untapped potential for Australian dairy in both domestic and international markets.
