The U.S. dairy industry is witnessing a notable rise in demand for whey protein, driven by its incorporation into a wide range of food products. Whey, traditionally used as a mix-in powder or protein bar, is now found in breakfast cereals, bagels, pretzels, and instant noodles across supermarket shelves. Prominent brands such as Frito-Lay and Starbucks have introduced products like 'Protein Nacho Cheese' Doritos and high-protein beverages to cater to this trend.

According to Carly Rowcotsky, an architectural design coordinator, the usage of whey has expanded beyond athletes to the general populace, who find it a convenient dietary supplement. Chuck Nicholson, a professor of supply chain management at Penn State University, attributes this trend to social media influence and dietary advice, with protein intake emphasized in guidelines for users of weight loss drugs such as Wegovy and Ozempic.

The U.S. government has also updated its nutrition guidelines, increasing the recommended daily protein intake to 1.2-1.6 grams per kilogram of body weight. Health Secretary Robert F. Kennedy Jr. highlighted the essential role of protein and healthy fats in nutrition.

Despite the rising demand, the supply of whey faces constraints. Whey is a by-product of cheese production, and increasing its output requires specialized equipment and additional capacity in the dairy industry. The industry has invested $13 billion in expanding capacity, technology, and supply chain optimization to meet the growing demand, as noted by Michael Dykes, CEO of the International Dairy Foods Association.

Prices for whey protein have surged, with high-concentrate whey experiencing a 150% price increase. This price hike has made whey production more profitable for cheesemakers, although Kathleen Noble Wolfley, a dairy industry expert, points out that cheese production still surpasses whey production in the U.S.

Joshua White of T.C. Jacoby & Co. emphasized that despite increased production capacity, market demand continues to outpace supply, leading to higher prices and increased profitability in the sector.
