The production of a one-ton cheese in Villa María, Argentina, is set to become a notable event in the dairy industry. This ambitious project requires 10,000 liters of specially selected and pasteurized Holando cow milk, standardized to 2.80% fat content. The process is designed to adapt conventional cheese-making techniques to handle a structure of this scale, where variations in time, temperature, and procedures can significantly impact the final product's texture, moisture, and quality.

The cheese-making process begins in two vats, each containing 5,000 liters of milk. One vat includes a colorant to replicate the classic two-tone appearance of Mar del Plata cheese. The grain size of the curds is intentionally smaller than usual to facilitate whey removal within the massive 1,000-liter mold.

Once the curd mass is formed, it will be placed in a cooling chamber for approximately 20 hours to halt ferment activity at the precise acidity level. Following this, a special pressing technique using Swiss cloth will be applied before the cheese enters the maturation phase, lasting between two and two and a half months.

The project is taking place at ‘La Cenobia,’ a facility owned by the Barrenechea family, which provides the necessary infrastructure. A team of five specialists, along with additional collaborators, will oversee technical controls, logistics, and the management of the massive cheese piece.

This endeavor aims to demonstrate the technical, productive, and innovative capacities of one of Argentina's leading dairy regions. The one-ton cheese is expected to be a highlight at the MECA26 event, illustrating how the combination of knowledge, technology, and scale can elevate the Argentine cheese industry to unprecedented levels.
