Polish dairy giant Bakoma has initiated a digital transformation initiative across its manufacturing facilities through a partnership with industrial software provider AVEVA and system integrator Explitia. The goal is to streamline operations from raw milk intake to final packaging, using AVEVA System Platform and AVEVA Historian to form a centralized digital architecture.
Historically, Bakoma's data was fragmented across disparate SCADA platforms and physical screens, complicating diagnostics and employee training. The new system consolidates data from various operational stages, providing plant managers with real-time visibility and facilitating seamless data access.
The digital integration focuses on end-to-end process monitoring, crucial for maintaining food safety and compliance. Automated surveillance over Clean-in-Place systems, sterilization cycles, and fermentation variables ensures process deviations are caught early, safeguarding batch quality.
The platform also generates digital documentation, ensuring traceability and meeting auditing requirements for retail partners and food safety regulators. This standardization reduces the cognitive load on staff, allowing for efficient rotation between production zones and quicker onboarding for new employees.
