Production begins when milk leaves the herd and travels through stainless-steel pipes to the dairy located on the farm. A centrifuge fitted with 35 plates separates cream from whole milk: centrifugal force moves the fat upwards, while skimmed milk exits through the opposite side of the machine.

The cream is left to rest before being transferred to a dedicated churn. It remains in motion for about an hour, allowing butter to separate from the whey. The butter is then washed twice with chilled water to remove the remaining liquid. The final choice is whether to add salt; no other ingredient is included in the product.

The butter’s natural yellow colour is associated with the absence of additives and with the cows’ pasture-based diet. It comes from beta-carotene present in the milk. The same production system is also linked in the source to higher levels of omega-3 and conjugated linoleic acid, an antioxidant reported in greater quantities in animals raised on pasture.

Those characteristics have brought renewed attention to the place of butter in the diet, particularly in comparisons with margarine. Specialists cited in the report said that the issue is less absolute than the debate often suggests. No single food, they said, is by itself responsible for harming health, and butter consumed in moderation does not in itself constitute a cardiovascular risk. They identified overall eating habits, rather than one item at breakfast, as the relevant consideration.

The method used at the Serra Negra dairy also reflects an older process than the stainless-steel equipment now used. One hypothesis about butter’s origins is that it emerged accidentally during the Neolithic period, when milk carried in animal-skin containers was shaken while being transported.

Sumerian records describe the process around 2500 BC. The technology has changed over the intervening millennia, but the basic sequence remains agitation, temperature and time converting milk fat into butter.
