The rising popularity of Greek yogurt and cottage cheese in 2024, fueled by TikTok and other social media platforms, has prompted dairy companies to boost production. Upstate Niagara Cooperative, responding to this surge in demand, is planning a $150 million expansion in West Seneca, New York, according to Buffalo Business First.

The cooperative has proposed a 250,000-square-foot addition to its current 222,851-square-foot facility, with plans to commence construction later this fall. The expansion aims to address the "insatiable" demand for cottage cheese and Greek yogurt.

Buffalo Business First reports that 203,843 square feet of the new space will be allocated for manufacturing products like milk, yogurt, sour cream, and cottage cheese. The expansion will significantly increase employment at the West Seneca site, boosting the workforce by 54% from 240 to 370 employees.

"The market data we're seeing suggests that both cottage cheese and Greek yogurt are growing, and we're expanding to meet that customer demand," said Upstate CEO Kevin Ellis in an interview with Buffalo Business First. "People are trying to get more protein in their diets."

The expansion project is expected to be completed by late 2026, aligning with the growing consumer interest in protein-rich dairy products.
