A healthy cheese made from yellow peas and without milk has been made in Britain.

In Britain, they came up with a recipe for dairy-free cheese, this is stated on the official website of the University of Nottingham, whose scientists were involved in the development together with a subsidiary of The Good Pulse Company. They said they had succeeded in making Pea Cheese, a new plant-based product based on local yellow peas.

“As a result of the research we carried out previously, we identified yellow peas as the ideal ingredient for this due to their composition and availability in the UK,” explained Associate Professor of Food Structure and Processing Dr Vincenzo di Bari.
Yellow peas are popular in the United Kingdom and are traditionally used in soups, stews and casseroles. The British value the legume plant for its high content of protein, iron and essential amino acids, which the body cannot produce on its own and must be obtained from food.
Now university researchers have created what they say is a “revolutionary” vegan cheese using yellow split peas. They explain that typically mass-produced vegan cheese is made from coconut oil. Because of this, this cheese is high in saturated fat and low in protein. Yellow peas are rich in protein, which is why Pea Cheese contains much more of it than the vegan version.
Speaking to the BBC, university graduate and head of the spin-off company Cesar Torres noted that when veganism became popular, many developers began to strive to create such products "without paying much attention to the nutritional aspect."
“Consumers are now beginning to appreciate not only the sustainability, but also the nutritional benefits of some plant-based or vegan cheeses. So we realized that we needed to do something outstanding and legumes suited us for this purpose.”
The powdered cheese mixture consists of 90% yellow split peas. Then it is mixed with warm water for 20–30 minutes. The creators do not disclose the further recipe, since they have already filed for a patent. But they hinted that their pea cheese tastes like cheddar, thanks to the use of flavorings that mask the taste of yellow peas.
