Danone and 5 other food innovators have teamed up to share their expertise and create a revolutionary vegetable product. The result was not a vinaigrette, but vegetable yogurt.

The prototype was made from NoPalm Ingredients yeast oil, obtained by fermenting vegetable waste. Two days of intensive work at the AAK Plant innovation center in the Netherlands was enough for the companies. During this time, they developed the recipe and process for producing 7 kg of plant-based drinkable yoghurt. It took even less to create the product – only 24 hours. The partners say they have made the world's first plant-based yogurt, made from yeast oil from recycled and fermented plant waste.

The partners do not disclose which vegetables were used to make the oil that was included in the yogurt. But it is known that the startup NoPalm Ingredients, one of the main participants in the partnership, makes so-called single-cell oil through the fermentation of potato peels and sugar beet tops. After the fermentation process, the oil is separated and sold to food and cosmetics companies.

  • Givaudan is the world's largest manufacturer of food flavors and perfume compositions. The Swiss are also working to improve the taste and smell of alternative meats. Givaudan recently mimicked animal fat cells using encapsulated coconut oil to make a plant-based burger as juicy as a beef burger.
  • AAK (AarhusKarlshamn) is a leading manufacturer of vegetable oils and fats.
  • Ingredion is a global solutions company for the food industry.
  • Mista is a platform that optimizes startups in the field of innovative products.
