Lab-grown whey proteins are creating new avenues in food technology, but a study from the University of Nevada, Reno, highlights significant differences compared to cow-derived whey.
The Evolution of Protein: Lab-Made Whey Protein Faces Challenges

For decades, food innovation has strived to keep pace with population growth, environmental concerns, and nutritional needs. Now, laboratories are stepping into the culinary landscape, providing a new source of protein to complement farm and ocean-sourced options. Scientists are harnessing genetically engineered yeast to produce lab-based proteins that mimic those found in dairy products.

Companies are capitalizing on these lab-grown proteins, presenting them as substitutes for traditional dairy in products ranging from ice creams to burgers. However, emerging research from the University of Nevada, Reno, is challenging the perceived equivalence of these proteins.

Led by doctoral candidate Matthew Bolino and assistant professor Steven Frese, the study discovered core differences, focusing mainly on the protein β-lactoglobulin, which is predominant in both synthetic and cow-derived whey. However, the diversity of proteins and glycan structures differed noticeably, with cow-derived versions presenting a broader spectrum, thus influencing microbiome reactions in a simulated gut environment.

This pivotal research, published in Microbiology Spectrum, underscores the potential impact of lab-made whey on gut bacterial diversity. With groundbreaking mass spectrometry techniques, researchers revealed that structural variations in synthetic whey could alter digestive processing and microbiome interactions.

Collaboration was key, involving scientists across institutions in the United States and Turkey. Supported by grants from prominent national scientific bodies, the study paves the way for more nuanced understanding of food biochemistry and its implications for human health.
