Sales of Mold Cheese in Russia Increased by 6% in 2025
According to CATD analytics, the highest consumption of such cheeses per thousand residents was recorded in major urban agglomerations. Saint Petersburg led the way with 134.23 kg per 1,000 people, followed by Moscow (129.35 kg) and the Moscow region (105.33 kg).
Mold cheeses are categorized as so-called noble cheeses. They are produced using specially cultivated fungal cultures that form the characteristic taste and aromatic properties of the product. Depending on the type of mold culture used, the mold can have white, blue, red, or green hues.
According to the marking system data, cheeses with white mold were in the highest demand in 2025. Sales of the "Brie" variety amounted to about 870 thousand kg, and "Camembert" to 405 thousand kg. Among blue mold cheeses, the most popular was the GrandBlu variety, with sales reaching 355 thousand kg.
