Rivoire-Jacquemin holds the distinction of being the oldest and largest cheese-ripening facility in France. Established in 1860, the facility has a long-standing tradition of maturing Comté cheese, which is a cornerstone of its operations.

The facility is responsible for maturing approximately 150,000 wheels of Comté cheese, equating to around 5,700 tonnes.
