The United States Department of Agriculture (USDA) has confirmed a significant rise in commercial listings for this dairy product, signaling a structural shift in consumer preferences.

This surge in demand has prompted major industrial players, such as Entrepinares in Europe, to invest over 20 million euros in their Vilalba, Lugo plant. The expansion aims to enhance processing capabilities to handle approximately seven million kilograms annually, marking the company's entry into fresh dairy manufacturing to address frequent shortages faced by leading retail chains like Mercadona.

Cottage cheese is characterized as a protein-rich, unpressed curd, containing about 12 grams of high biological value protein per 100 grams, and only 4% fat. Such nutritional profiles align with the rising demand for functional and nutritionally dense foods, providing dairy producers with an opportunity to convert raw milk surpluses into high-value products.

According to NIQ consultancy, cottage cheese consumption grew by an impressive 61% in 2025, outpacing traditional fresh cheese categories by a significant margin. The growth, although starting from a modest market base, is global, with mature markets like the United States and the United Kingdom showing annual growth rates between 20% and 41.9% in both value and physical volume.

The dairy sector is debating whether this commercial boom represents a permanent shift or a transient trend. Analysts like John Crawford suggest that the consistent double-digit growth over two years reflects market maturity, while experts such as Mike McCully advise caution, noting the surge follows a two-decade decline. The industry is adapting by developing flexible manufacturing models to mitigate financial risks.
