Discovery of 130-Year-Old Danish Butter Culture Reveals Historical Dairy Practices
A time capsule containing two bottles was discovered in a historical basement in Frederiksberg, Denmark, revealing a 130-year-old starter culture used for butter production. Researchers from the University of Copenhagen analyzed the contents, finding it to be a significant part of Denmark's dairy history. This starter culture, dating back to the late 19th century, played a pivotal role in the technological advancements of the dairy industry during a transformative period for Danish agriculture.
During this era, Denmark underwent a major agricultural reorganization, adopting modern industrial techniques and cooperatives. These changes enabled the country to significantly increase butter production to meet the growing demand from the British market, which was the primary destination for Danish butter exports. In just three decades, exports surged from around 10,000 tonnes to approximately 80,000 tonnes. By 1900, butter accounted for nearly half of Denmark's total exports.
Pasteurization was a critical factor in this transformation, allowing butter to endure maritime transport without compromising quality. The DNA analysis of the starter culture identified Lactococcus cremoris, a bacterium crucial for producing the smooth flavor and texture characteristic of Danish butter. Researchers highlighted that this culture was added post-pasteurization to standardize aroma and quality, strengthening the international reputation of Danish butter.
However, the discovery also revealed the presence of Cutibacterium acnes and Staphylococcus aureus, indicating that the hygiene standards of 1893 were not as advanced as today's food industry protocols. This contrast reveals a snapshot of the time when fermentation technology was highly developed, yet contamination control faced limitations due to the scientific knowledge of the period.
The preserved bottles from Frederiksberg provide more than historical artifacts; they offer a unique opportunity for scientists to biologically reconstruct food production methods from over a century ago and understand the evolution of microorganisms in the dairy industry.
